Elderflower blooms will begin to appear this month, and the sweet, gentle herb works well with cucumber and mint. Combined this makes the basis of a delightful summer cocktail.
At the time of writing, the weather is dragging it's heals but hopefully in the coming weeks this can serve as a perfect aperitif before the pigeon and asparagus salad.
Makes one
Add a handful of cucumber (sliced about 1cm and quartered) and a decent spring of mint into a cocktail shaker and muddle (mash) then add 25ml of elderflower cordial, 25ml of lime juice, 50ml of apple juice and 50ml of gin.
Shake with ice.
Pour through a sieve into a chilled glass with some ice (you can decorate the inside of the glass with strip of cucumber using a vegetable peeler), If you want, top up with more apple juice, garnish with a spig of mint and borage (another May favourite) if you have some.
Sip and enjoy.
